Hummingbird
Always a hit at our Bubbles and Cheese event, Hummingbird is a mold ripened cow's milk cheese. The batch in the shop right now is at it's peak of flavor. The prefect balance of light citrus flavors and an unctous dollop of cream.

Shakerag Blue
Beautiful Shakerag (SHEYK-rag) blue. Comes to us from Sequatchie Cove creamery, located northeast of Chattanoga. This cheese fully embraces it's Southern heritage. Named after a hollow notorious for moonshining, this blue is made from raw cow's milk and covered in Fig leaves soaked in a local whiskey. (Think Rogue River Blue comes south!) The taste is bright, sweet and a little fruity with great funk. Notes of buttermilk, grass and pine round out the experience.
